He demonstrated the important attribute of consistency makes to his reputation for quality by scooping more medals this year. Derek’s three golds at the regional championship were for both speciality and traditional sausage, with the pork and apple and pork and garlic sausage (which qualified for the final), but his traditional sausage also struck regional gold.
Having given such a strong performance at regional level in the speciality sausage category, Derek moved in to the more competitive national stage at the RDS and proved he can match the best at that level also. In 2007 he won the national award outright.
Associated Craft Butchers of Ireland chief executive Pat Brady, said the consistency and quality represented by this achievement showed real dedication that could only be achieved by maintaining the highest of standards.
“In the real world, this is what the consumer expects – consistent high standards,” said Mr Brady.
The competition, which is judged by the Irish Food Writers Guild, culminated in the finals at the RDS last week watched by a large crowd attending the SHOP Expo.
