Aussie chef gets a taste for the Burren

Diners tucked into yet another culinary delight at Cassidy’s Pub in Carron recently, unaware that their succulent goat stew had been prepared by Aussie celebrity chef Lyndey Milan.

Australia’s most recognised food, wine and lifestyle personalities was touring and filming in North Clare for the programme, A Taste of Ireland when she turned up the heat in the kitchen of the noted North Clare pub and eatery.

For the programme, which will screen on TV3 on July 16 and which has already aired in Australia and New Zealand, Lyndey joined historian and naturalist Tony Kirby in the Burren to learn of the tragic history of the Famine Road, before taking shelter in Cassidy’s Pub to cook a deluxe goat stew.

Later she met Ireland’s Chef of the Year, Mickael Viljanen, before visiting O’Laclainn’s Pub in Ballyvaughan with its eclectic whiskey collection made famous by film director Steven Spielberg.

She continued on her travels for a taste of the wild Galway oyster and to cook seafood chowder at Moran’s Oyster Cottage at The Weir in Kilcolgan.

A familiar face on television and in print, she been instrumental in changing the way Australians think and feel about food and wine for more than 25 years.

Lyndey’s visit to the West was assisted by tourism bodies Fáilte Ireland and Tourism Ireland.

Of her trip, she said, “The freshness, variety and quality of Ireland’s produce, not to mention that it is largely organic, have left a lasting impression, as have the truly warm-hearted and generous people I met on the trip.

“I was especially impressed with Irish seafood and relished the opportunity to cook with it, as well as beef, lamb and dairy – for a cook that is all important. I am excited to reveal Ireland’s beautiful countryside and its bounty, both food and people, to the world.”
